Brian , currently the Executive Chef at the Grand Bohemian Hotel In Asheville, NC, has been working in professional kitchens for almost 30 years, mostly in the western North Carolina mountain region. He has always placed an enormous emphasis on learning, teaching, and training in any kitchen of which he's been a member. Brian has an enthusiastic interest in the craft of charcuterie, preparing and preserving meat.
