Mark lived 34 years in Appalachian Kentucky, where he taught courses in psychology and Appalachian studies. During that time, he was the chef for a cable-access-only TV cooking show, "Classic Cooking." His cooking interests include recipe writing, food photography, gardening, preserving, and outdoor survival. His 2005 book, "Appalachian Home Cooking" (University Press of Kentucky), is still in print. His prior book, "Southern Country Cooking," was published in 1992 by Penfield Press. Mark now resides in New York City. He has taught at the Folk School since 2000.
