Jeanette and her family own Havencroft Farm in the Arkansas Ozarks. She's had dairy goats since 1979, started making cheese in 1982, and has been teaching cheesemaking since 2008. Jeanette makes cheese daily and in season, and loves to explore how to make the process fit into her busy life. Some of her favorites are Chevre, Jack Cheese, Cheese Curds, and Gouda. Jeanette also gardens and loves to add peppers and various herbs to her cheeses. She has learned that recording her process allows her to replicate successes and avoid repeating failures. Every cheese is unique to the area it is made because of the available milk, ambient bacteria, temperature, and air pressure. Jeanette loves to help her students to understand the process of cheese making, so they can succeed in making their own uniquely delicious cheese.
